Very good points, all. I also wonder about the comment about increased energy, and whether this has anything to do with the fact that most people who are following the gluten-free trend without any real NEED to, are experiencing more energy as a result of eliminating breads and not replacing them with many gluten-free bread products: those bread carbs can be real energy mongers!
Also, time and again non-Celiacs have benefited from going gluten free. Whether it's to reduce or eliminate other illness, disease or other nagging problems, I think the science shows that a) we don't need wheat and b) substantially reducing our intake of it is highly beneficial.
